To evaluate the Chanoka Yabukita Matcha, we evaluated the texture of the matcha as well as the flavor. Does it produce a dryness, sweetness, minerality or acidity? We’ll also evaluate how thick or rich the consistency of the matcha is, otherwise known as mouthfeel. Finally, for matcha specifically, we like to take a look at the vegetal flavor of the tea, as this is a profile consistent across all types of matcha.

The color of this matcha is a slightly pale green with more of a lighter color

The aroma coming off the powder as it is mixed into the water is savory with a hint of sweet spice

This matcha begins with a smooth sweetness that later transitions to a strong savory flavor profile on the mid palate. Then, a hint of acidity starts to kick in to quench the palate before finishing with a slightly dry sweetness.

To prepare the Chanoka Yabukita Matchai and make a foamy bowl of matcha, we recommend you to follow these basic steps. Once you master these steps, you can get creative and add your own spin to them. It's important to follow the steps closely in the beginning to practice the proper technique.

  • Trin 1

    Begin by sifting 2 grams of matcha powder into your bowl to remove any clumps that may have formed due to humidity.

  • Trin 2

    Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit. 

  • Trin 3

    Next, pour about 1 tablespoon of water into the bowl and mix the powder into a paste to ensure even distribution. Then, add 100ml of water to the bowl

  • Trin 4

    Gently scrape the sides and bottom of the bowl to ensure that the matcha is thoroughly combined with the water.

  • Trin 5

    Finally, use rapid zigzag motions with your wrist to whisk the matcha until a light green foam appears on top.

  • A matcha bowl, also known as a chawan, is a shallow ceramic or porcelain bowl that is specially designed for whisking matcha.
  • A matcha whisk, or chasen, is a bamboo whisk with thin tines that is used to mix and froth matcha powder with hot water.
  • A matcha scoop, or chashaku, is a bamboo scoop that is used to measure the appropriate amount of matcha powder and transfer it to the matcha bowl.
  • Sifting matcha is an important step in the traditional Japanese tea ceremony, as well as for everyday use, to ensure a high-quality cup of matcha. Using a sifter can help remove any clumps or impurities from the matcha powder.

The Chanoka Yabukita matcha is supplied by Takada Masahiro, a Uji-based farmer who runs Chanoka, a family business with a long history of producing high-quality teas. The Chanoka legacy dates back to 1900 when Masahiro's great-grandfather established their first tea garden in Uji, and the family has been dedicated to cultivating and manufacturing exceptional teas ever since.

The Chanoka Yabukita matcha is produced in Uji. Uji is arguably the most famous region for Japanese green tea production. This specific green tea is cultivated on Mr. Chanoka's tea farm, and it is grown at an altitude of 400 meters. The yabukita matcha is shaded for 3 weeks before the harvest in order to develop a nice sweet and savory flavor.

As the name would suggest, the Chanoka Yabukita matcha is made using the Yabukita cultivar, the most popular tea plant variety in Japan.

    Yabukita has become by far the most popular tea plant variety produced in Japan, making up close to 75% of the total production. One reason this tea cultivar has become so popular is because it is resistant to frost, so it can survive the relatively cold winters of Central Japan. The tea also produces a strong savory and vegetal flavor, which is well-liked by fans of Japanese green tea.
